LAKHNAWI GALAWATI KABAB:
Ingredients for Marinade:
Beef/Mutton mince 250 gm
Papaya paste 1 tsp
Ginger garlic paste 1tsp
Green chili paste 1 tsp
Nutmeg & mace powder ½ tsp
Cinnamon powder ½ tsp
Red chili powder 1 tsp
All spice powder ½ tsp
Poppy seeds (roasted & ground) 1 tsp
Coconut (roasted & ground) 1 tbsp
Cumin (roasted & ground) 1 tsp
Yogurt 1 tbsp
Fried & crushed onion 2 tbsp
Butter 1 tbsp
Other Ingredients:
Roasted chickpea powder 2 tbsp
Oil 4-5 tbsp
Method:
Add all marination ingredients in a bowl, mix well, then add roasted chickpea powder and marinate it for at least 2 hours. Make long or round kababs, cook them in 4-5 tbsp oil for few minutes or until done. Serve with tamarind chutney and yogurt raita.

Spicy Chops :
Ingredients:
Mutton chops 1/2 kg
Ginger garlic paste 1-1/2 tsp
Chili powder 1-½ tsp
Coriander powder 1-1/2 tsp
Cumin powder 1 tsp
Turmeric ½ tsp
Yogurt 6 tbsp
Onions (fried & ground) 2 tbsp
All spice powder 1/2 tsp
Screw pine water 1/2 tsp
Chopped coriander for garnishing
Ginger (julienne cut) 1’ for garnishing
Oil 1/4 cup
Method:
Mix ginger-garlic paste, chili powder, coriander powder, turmeric, roasted cumin powder and yoghurt. Marinate the mutton chops and leave for a few hours. Heat oil. Add the marinated chops. Add water and let it cook for 45 minutes or till done. Lastly add all spice powder and screw pine essence. Garnish with coriander and ginger and serve.

Tamarind Mint Dip:
Ingredients:
Tamarind 250 gm
Mint leaves 1 cup
Green chili 1-2
Garlic 2 cloves
Roasted crushed cumin 1 tsp
Salt 1/4 tsp
Method:
Soak tamarind in 1 ½ cups water for 15 minutes. Discard seeds add in a chopper with the mint, green chili, garlic, roasted cumin, little water and salt, blend till smooth.

Yogurt Mint Raita:
Ingredients:
Yogurt 250 gm
Mint leaves a handful
Green chili 1
Garlic 2 cloves
Roasted crushed cumin 1 tsp
Salt 1/4 tsp
Method:
Chopperize all ingredients well, fold in yogurt and chill.
